Vegetable Kuzhi Paniyaram - Lunch Box item for kids


Thinking of a food to pack for kids is really a task !!! The item should be liked by our kids, it should be heathier, same time it should be easier to make for working women too. Herez a quick and easy way to push in all the vegetables we need hidden inside with a handy item we allways at home - idli atta.
 
Ingredients
 
Idli mix (atta we use for idlis)  - 1 cup
vegetables - shredded - 1.5 cups (i used carrot, beetroot,cabbage and beans)
onion - finely chopped - 1
 
to temper: Urad Dhal, channa dal, red chillies - 2, oil
to garnish : idli milaga podi
 
Preparation:
 
Take a cup of idli mix add all the shredded vegetables to it. Keep a pan in the stove, add oil and add the items under 'to temper'. When the chilli turns colour, add the chopped onion. Fry for some time. When onion turns light brown, remove it and add these to the idli mix and mix together. (You can add corriander leaves and shredded coconut if you prefer for more garnishing)
 
Place a kuzhi panniyaram pan in the gas and pour some oil. When the pan is slighty hot, take the
prepared mix in small spoons and pour them to fill only 3/4th in the panniyaram plate.  Sprinkle some idli milaga podi over the batter, if your kids take in spicy food. Turn it over once the idli is slightly brown on the corners. Allow it to cook the other side too.
 
Take it out when it is slightly dark brown. This item requires no side dish. Idli served with the healthy vegetables we need our kids to take in - in a different way.
