Egg and Vegetable Burji

Ingredients :

1. Egg - 4 Nos
2. 1 cup of vegetables chopped finely (i used carrot, cabbage, capsicum and beans)
3. Onion - 1 big sized
4. Tomato - 1 big sized
5. chilli and coriander powder - 1 tsp
6. ginger garlic paste - 1/2 tsp
7. pepper powder - 1/2 tsp
8. oil to saute
9. salt to taste

Preparation :

In a tawa pour some oil and fry the onion for a while. Then add ginger garlic paste, spice powders and fry till the raw smell goes. Then add tomatoes and fry till the mix blends well together. Then add the cut vegetable mix, add salt and keep stiring sprinkling some water to cook the vegetables. Once the vegetables are cooked well, split eggs one by one and add them keeping the gas in low flame. Keep stirring lightly till the eggs are cooked. Do not over stir. Eggs will break down to fine pieces without any texture. Add pepper powder and stir for a few times, add corriander leaves and serve hot.
