Masala Coconut rice

Bored of the regular coconut rice, my daughter protested to carry it on her lunch box.. so thought I will try the same with a little modification.. n here it is....


Ingredients: (for 2 tiffin boxes)

cooked rice - 1 bowl
Coconut scrapped - 1/2 cup
onion - 1
tomoto - 1
green chillies  - 2
garam masala - 1 tsp
salt to taste

Scrap the coconut and keep aside. Pour a spoon of oil in the saucepan and add little saunf , 1 clove and brinji leaf. When it splutters, add onion and salt and roast them. (You can add some pudina leaves if you wish. ) When the onion turns brown add tomato and the garam masala. fry them till the raw smell goes and the juice from the tomato blends well with the mix. Now add the scrapped coconut and fry them for few minutes. (do not over fry the coconut).

Switch the gas off, and allow the mix to cool. Once cool,  Add rice to the mix and pack off the lunch box. To give it a rich flavour, Fry few cashews in ghee and add them to the rice.
